Today’s dinner is Mediterranean-style Chirashi-sushi.
In the past, vinegared rice was made with wine vinegar, but now I have changed it to apple vinegar.
Apple vinegar has a milder taste. I like it because it doesn’t feel like it comes with a thud.
Hon-Maguro, Madai, Octopus, Shrimp, Salmon, Steamed scallops
It’s very delicious!
Today’s Wine
La Croix Gratiot Rose 2021 2,000 yen
This rose wine is made from Cabernet Sauvignon and Syrah harvested in the vineyards of Languedoc close to the Mediterranean Sea.
Even though I cooked Mediterranean-style Chirashi-sushi, both the sashimi and rice are all made in Japan.
Only the wine is genuinely delivered from the Mediterranean.
I felt a red fruit flavor reminiscent of strawberries, beautiful acidity and moderate minerality.
It is a pure wine full of coolness.
You can’t believe it from a southern region.
