今日はラザニアを焼きます。
前菜は、マグロのマリネと
プロシュートとイチゴのサラダ
ラザニアも上手に焼き上がりました。
もちろんトマトソース、ベシャメルソースは手作りです。
デラうま。
1本目 ミソノ・ヴィンヤード ホワイト・デラウエア 2022 2,500円
北海道余市町のミソノ・ヴィンヤードから、12月のピンクナイアガラ、ペティアンにつづいて、3種類のキュヴェが新しくリリースされました。
このホワイト・デラウエアは、非発泡のスティルワイン。
樹齢３０年のデラウエアの完熟葡萄に、栽培4年目のソーヴィニヨン・ブラン（５％）を混醸。
ブドウは全て有機栽培。
何も加えず（無補酸・無補糖・無発酵補助剤）野生酵母でゆっくり発酵、仏フランソワ・フレール社製の古樽で樽熟成の後、瓶詰めしています。
アロマとフレーバーに、ラフランスの香りを強く感じます。
厚みのある果肉に綺麗な酸とミネラル感。
デラウエアから、こんなエレガントなワインが出来るんだ、と驚きました。
ロウづけコルクのデラウエアってのもすごいですよね。
とても美味しいワインです。
2本目 ミソノ・ヴィンヤード オレンジ・デラウエア 2022 2,500円
オレンジ・デラウエアは、2021年に続いて2回目のリリースです。
こちらも無農薬、野生酵母、亜硫酸無添加。
数日間にわたり皮と種と一緒に醸しています。
瓶内二次発酵後、無濾過で出荷。
見てください、このオリ。
最後はこんな感じになります。
でも、このオリが美味しい。
まるでフルーツヨーグルトです。
厚みのあるフルーツ感としっかりとした酸。
口に含んだ時のヴォリューム感も印象的。
いや、美味しいです、これ。
なんともユニークで、美味しいペットナットの登場です。

1st Misono Vineyard White Delaware 2022 2500 yen New arrivals
It is made from 100% Delaware grown in the estate vineyard in Yoichi Hokkaido by organic method.
All of the grapes were fermented by wild yeast without sulfur.
The wine was matured in the French cask for 12 months and bottled by non filtered.
I felt strong pear aroma and flavor at first.
I also felt rich fruits, clean acidity and fine minerals.
I was surprised that Delaware became such elegant still wine.
Very tasty!
2nd Misono Vineyard Orange Delaware 2022 2500 yen New arrivals
This sparkling wine is made from 100% Delaware grown in the estate vineyard in Yoichi by organic method, too.
All of the grapes were fermented by wild yeast without sulfur with their skins and seeds.
Then the second fermenting was done in the bottles.
Then it is released by non “Degorgement”.
I felt rich red berries, charming acidity and good minerals.
Look at the segments!
However, the segments were delicious.
It is like a yogurt.
Tasty! Tasty!
