Jan. 20
I went to Shin-Yurigaoka and had a nice sushi dinner at Sato.
It was the first time I have had Sato’s sushi recently.
This sashimi was once again very delicious.
Today’s grilled fish was Hokke.
This might be the best Hokke I’ve ever eaten.
Wine is brought in as usual.
1st Rankoshi Ito Farm Kamisato Blanc 2021
It is a white wine from Rankoshi, Hokkaido.
It is made from 53% Sauvignon Blanc, 24% Pinot Blanc, 18% Auxerrois, and 5% Gewürztraminer grown in the estate vineyards at the foot of the Niseko Mountain.
The gentle and elegant fruit flavor was perfect for sashimi.
2nd Kamakura Winery Yamagata Delaware Pink Orange 2022 3,680 yen
I bought it at a winery I visited the day before yesterday.
I was impressed by the wine tasting at the winery, but it is even better to drink it with delicious food.
I felt the slight astringency, thick fruit, and indulgent acidity.
They showed a wonderful sense of balance.
I felt a very pure mouthfeel that cannot be imagined from the turbidity of the exterior.
It’s delicious and has the nuances of trendy natural wines.
This orange wine was very delicious.
3rd Domaine Merlin Bourgagine Rouge 2020
I tasted Burgundy for the first time in a long time.
It may be the first time that Sato’s sushi has been paired with Burgundy.
Merlin is a leader in the Macon area.
It has a reputation for decent winemaking.
And this is so delicious. It’s a good Pinot Noir.
That’s the kind of wine I want to drink.
It was perfect for sushi.
After all, the sushi and wine are the best!
