Today’s dish
Bora and Firefly-squid Sashimi

Salad with strawberries, mozzarella, small shrimp, avocado, broccoli, cherry tomatoes and apples

Wagyu Beef Thigh Steak, Ponzu-sauce


Bora sashimi is rare.
I had an image of a little seashore smell, but today’s Bora was delicious without any odor at all.

Today’s Wine

Belles du Sud Pinot Noir 2023
I was torn between sashimi, strawberry salad, and wine to go with the steak.
At first, I thought I would choose it an Alsace Riesling, but when I was grilling the meat, I wanted to drink red wine, so I opened this Languedoc Pinot Noir.
It has a generous and pure fruits flavor with a smooth and cool feeling.
It might have been a good idea to change the steak sauce from red wine sauce to ponzu soy sauce with grated radish.
It went well with all the dishes.
