Mediterranean-style Chirashi-sushi

Today, I cooked a classic treat, Mediterranean-style Chirashi-sushi.

 

 

Drumstick Tuna, Bonito, Madai, Mackerel, Salmon, Shrimp, Raw Whitebait

 

 

Tomatoes and cress are mixed in for toppings, and pine nuts and sweet basil are mixed in for vinegared rice.

 

 

Delicious!

 

 

 

1st Joostenberg Fairhead 2018 2,500 yen

I wanted to drink a wine with a high taste, so I opened this South African Joostenberg.

It is made from Marsanne, Chenin Blanc and Viognier organically grown in the estate vineyard.

It is fermented by wild yeast.

I felt thick fruits flavor, beautiful acidity and overwhelming minerality.

If this one is a Rhone white wine, this class may cost about 10,000 yen now.

The Western Cape, where Joostenberg is based, has a typical Mediterranean climate, and it was perfect for today’s sushi.

 

 

2nd Vignoble Clamens 2020 1,150 yen

A red wine from the Fronton district near Toulouse, one of France’s five largest cities.

It is a rare production area that is not often seen in Japan.

It is a blend of 50% Merlot and 50% Syrah.

I felt black berry fruits reminiscent of prunes, soft tannins and pleasant aftertaste.

After I finished eating sushi, I drank a little while watching TV.

It is a sustainable wine with HVE Level 3 certification.
