Mediterranean-style Chirashi-Sushi

Mar. 31

Even though it’s only March, the maximum temperature in Tokyo is 28 degrees Celsius.

It’s hot, it’s hot.

The plum blossoms in the house next door opened all at once.

Well, today’s dish is Mediterranean-style Chirashi-Sushi with a change of plans.

It’s a summer staple in our house.

With the rise in temperature, the baton is passed from Nabe dishes to Chirashi-Sushi.

Rice soaked in fruits vinegar is mixed with pine nuts and basil.

The parsley topping will turn black and become bitter when cut with a knife, so carefully shred it with my hands.

It’s been a long time since I’ve had Mediterranean-style Chirashi-Sushi, Della Uma.

1st Marche de Beau Rond Sauvignon Blanc 2022 1,050 yen

On days when the temperature is high, a well-chilled Sauvignon Blanc is delicious.

It is made from grapes grown on the Mediterranean coast of South-France.

It was perfect for Mediterranean-style Chirashi-Sushi.

2nd Oriol Rossll Xino-Xano Blanc 2021 1,300 yen

Along with the Chirashi-Sushi, the second bottle was also a white wine.

It is a blend of Xarel-lo and Muscat organically grown in the estate vineyard in the Penedes Spain.

I felt very clean fruits, beautiful acidity and clear minerals.

This pure taste without any miscellaneous taste is truly magnificent.

I like this very much.

Penedes is also a wine region on the Mediterranean coast.

It was perfect for Mediterranean-style Chirashi-Sushi.

Now, suddenly, this Perogubi wine diary, which I have been doing for many years, will end today.

Thank you very much for your relationship over the years.

So, goodbye.
