Mediterranean-Style Sushi

Nov. 4

It’s November, so what’s this heat?

At my university festival in early November long time ago, I remember that I shivered while wearing a down coat at a mock store.

It’s dangerous, isn’t it?

Today’s dish was Mediterranean-Style Sushi.

Mix sweet basil and pine nuts to make vinegared rice.

Tuna, black snapper, raw scallops, and bonito are marinated in olive oil and balsamic and topped with cherry tomatoes and cress.

It’s a simple dish, but it’s very tasty.

1st Shinshu Takayama Winery Sauvignon Blanc 2021  3,025 yen

This Sauvignon Blanc is delicious.

This is the second time I’ve drunk it, but it tastes better and better.

It has a sharp acid and outstanding minerality, but there is plenty of plump and rich fruits flavor hidden behind it.

It has a firm body and a hint of Japanese citrus that is unique to Japan Sauvignon and has a slight bitterness.

The more you drink, the more new you will discover this wine.

This Sauvignon Blanc is very tasty.

2nd Kobe Reserva Cabernet Sauvignon Clairet 2021  3,500 yen

Hand-picked Cabernet Sauvignon is triaged twice in the vineyard and in the fruit sorting area, and then hand-squeezed from the grapes.

In order to make the most of the characteristic aroma of Cabernet, we dared to finish it in a rosé wine.

I also participated in this wine project. There are only a few stocks left.

I felt gentle fruit taste, natural acid and pleasant astringency.

It is a Cabernet Sauvignon with a gentle yet rich style.
