Madai, Kinmedai, Houbou, Squid, Scallops, Mizutako, Yellowtail, Tuna-Mayo, Cucumber
This is four servings.
Kinmedai was from our local Sagami Bay.

1st Villa d’Est Winery Sauvignon Blanc 2020
It is a gentle sauvignon unique to Japan, the land of rain.
I love this fluffy and pleasant fruits flavor and pure mouthfeel.
The core has a firm minerality.
This is so brilliant!
It is an elegant wine that cannot be served unless it is a Japan wine.
2nd Ajimu Wine Chardonnay 2022
A wonderful white wine unique to Japan was following.
It is made from 100% Chardonnay from Ajim, Oita Prefecture.
I felt a plump fruits flavor, elegant acidity and pure mouthfeel.
The complex aroma that comes from barrel storage is also exquisite.
Oh! really, really, delicious!
3rd Chateau Potensac 2013
After a series of wonderful Japan white wines, for some reason I wanted to drink asexually aged Bordeaux.
Although it is off-vintage, it has aged for a splendid 10 years.
It is a classic style dominated by Cabernet Sauvignon.
I was sure that it had a sense of stability unique to a high-quality Médoc chateau.
Recently, I’ve been delighted to encounter this kind of Médoc.
