I did desk work all day long at home.
Before the dinner, I shortly cooked the starter dish.
1st Domaine Xavier Wymann Minori Rose NV
I bought this one at Liquor Morisawa.
I chose this one to make a pairing with prosciutto.
It is made from 25% Pinot Gris, 25% Riesling, 25% Pinot Blanc and 25% Pinot Noir grown in Alsace by strict biologique method.
It is a Vin de nature, which use wild yeasts, non-chemical, non-sulfur, non-filter and non-fining.
There were a lot of yeast residues in the bottle.
If you sell this at supermarket, you must receive a lot of complains, I think.
Anyway, the taste was amazing, super delicious.
I felt comfortable babbles, charming red berries, natural fruits and pure acidity.
I felt some real fruits taste.
Even the residues were tasty, too.
It was outstandingly good for prosciutto.
Good choice!
2nd Chateau du Bois de la Salle Julienas 2018 1850 yen + tax
It was difficult to choose the second wine because the first one was a “super-bio” wine.
Finally, I chose this Cru Beaujolais.
It is not a “super-bio” wine but a very pure and natural wine.
It is made from 100% Gamay grown by sustainable method.
It is produced with very little sulfur, too.
The taste was very natural, delicate and elegant.
I felt very pure fruits, nice acidity and comfortable mouth feel.
It is not heavy but not flat.
I found again Gamay was a very fine grape variety.
I did a very good choice tonight, as well.
