It was a busy day with a lot of things to do, even though I was not feeling well due to lack of sleep.

 

With that in mind, I cooked only one dish today.

I made an AquaPazza that is relatively hassle-free, delicious, and has a lot of volume.

 

The clams are steamed in wine in advance.

 

 

Red snapper, maitake mushrooms, raw olives, canned whole tomatoes, and capers are steamed in white wine and clam broth.

 

 

Finally, add the clams and steam lightly.

 

 

Serve on a plate with pasta and top with mizuna and it’s done.

 

 

 

It was very delicious.

Belle du Sud Chardonnay 2023

 

 

This is Languedoc Chardonnay, which I continue to develop and import as PB wine for York Holdings’ supermarket.

A new lot arrived, so I opened it to check the quality.

Yes, it’s delicious after all. It is very delicious.

I felt fresh & rich fruits flavor, clean acidity, and firm minerality.

It is a pure and clear mouthfeel wine with no disturbing taste.

Yes, this arrival is also fine.
