Today’s dish
Today is Mediterranean-style Chirashi-sushi.
A vinegared rice is made with apple vinegar, and with plenty of basil and pine nuts.
When I was making vinegared rice, the refreshing aroma of basil filled the room, which was nice.
Tuna, bonito, red snapper, salmon, small shrimp
When it comes to Temaki-sushi, I am particular about raw and wild fish, but when it comes to Mediterranean-style Chirashi-sushi, it can be frozen or farmed.
The olive oil and balsamic that marinate the fishes cover the flavor.
Today’s Wine
Marquis de Beau Rond Orange Wine 2024 1,380 yen
This is an orange wine made with Sauvignon Blanc and Gewurztraminer from Languedoc-Camargue, close to the Mediterranean Sea.
Camargue is known as a production area for rose wine, and this orange wine is also good.
The cool sea breeze and sea mist from the Mediterranean Sea seem to protect the grapes from the heat.
It is thanks to the sea that high-quality Gewurztraminer grows in Languedoc.
I felt an aroma of fresh grapes and plenty of fruits. The faint astringency unique to orange is a good accent.
It was connected to the Mediterranean Sea, and it went perfectly with today’s Chirashi-sushi.
