Koshu wine in Yamanashi is also over 2,000 yen these days, so this cost performance is outstanding.
It perfectly complemented today’s dish that I worked so hard to make.
2本目 hirosaki craft wine Primo Passo Yama-So 2023 Sample Tasting
It is a sample wine from a small winery at the foot of Mt. Iwaki in Aomori.
It is a red wine made from 100% Yama Sauvignon from Aomori Prefecture.
Yama Sauvignon, commonly known as Yama-So, is a cross between mountain grape and Cabernet Sauvignon.
Grape varieties usually have strong acids and tannins, as well as a bluish tinge, but this wine has none of them.
I felt gentle fruits flavor, mild acid and astringency, smooth texture.
It’s delicious, I was a little surprised.
When I asked, I was told that it was a piggery made from late-ripened grapes with a short maceration period of 7 days and a gentle process.
