1st Audacia Chenin Blanc NV  Sample Tasting

This white wine is made from 100% Chenin Blanc grown in Western Cape, South Africa.

It was fermented without sulfur.

It was fermented with Rooibos, a popular tea in South Africa, instead of sulfur because Rooibos has a strong antioxidant ability.

I felt very rich fruits, pure acidity and fine minerals.

Especially, I was impressed in the very dense fruits.

I didn’t feel any off-flavor, which non-sulfur wine often had.

It is a very good Chenin Blanc.

Tasty! Delicious!

 

 

2nd Misono Vineyard Pinot Noir 2020  Sample Tasting

This Pinot Noir is a test producing wine made from 100% Pinot Noir grown in the estate vineyard in Yoichi Hokkaido by organic method.

The vines are two years old. The harvest was very small.

Only 60 bottles are produced.

The wine is fermented by wild yeast without sulfur.

Only 20 ppm sulfur was added when bottling.

Amazing! It is a very orthodox style of the fine Pinot Noir.

The color is violet dark, which is a rare style in Japan wines.

I felt charming black berries like a prune, beautiful-delicate acidity and solid tannin.

I felt slight babbles because of probably MLF.

The taste is very clean pure and natural.

I didn’t feel any off-flavor, which non-sulfur wine often had.

I am sure that it is a very fine Pinot Noir.

The winery produced 300 bottles of Pinot Noir in 2021.

I am really excited them!!
