I cooked a dinner today. Oysters, Ikasashi, Green Salad and Lazagna.
My Lazagna was getting better and better recently.

The reputation of the Domaine was getting popular very much. I heard the owner who was also winemaker was 33 years old. So young... I heard he learned wine making at Domaine Jayer-Gilles. Oh ! I was attacked by strong acid. I supposed the white wine has a long life, a potential of long mature.
I thought this was made by very well grown and picked up grapes. I felt a flavor kind of Aligote. Too strong for Ikasashi, very good for Lazagna.

I was also impressed at the strong acidity. Very concentrated, but I felt it was not too artificial but natural. I guessed that the winery also used very well grown and picked up grapes even though the vines were young. This probably has a big potential for long mature. I recommend this for Pinot Noir lover who is a heavy drinker.
