Yume Beef Thigh Steak with Japanese-style sleet grated sauce
Yume Beef is the original brand of the supermarket Maruetsu.
It is a cross between Japanese black beef and Holstein, and the price is about half the price of Japanese black beef, but it is excellent.
In particular, the lean thigh meat is so fine that you might think it’s fillet.
It also has a moderate chewiness unique to thigh meat, and the more you bite into it, the more flavorful it becomes.
I flambed it firmly with Armagnac.
It’s a treat. It was delicious.

Chase the Grape Chill Red 2022 2,800 yen
This is the fourth Chase the Grape made by my son in the cellar of Marusan winery in Yamanashi.
Muscat Bailey A (88%) grown in the Katsunuma area is blended with Merlot (10%) from the Vis area and Zala Gyongye (2%) from Katsunuma.
For a while after opening it, I could feel the reducing smell from sulfite-free fermentation, but it gradually stopped bothering me.
The complex fruits flavor derived from wild yeast has a mellow astringency and a smooth mouthfeel.
It went well with ginger and grated radish with soy sauce and mirin in a Japanese-style sauce.
