Salad with Shine-Muscat, Salmon, Mozzarella, Broccoli, Cherry-Tomatoes and Apples

The salmon in today’s salad was Atlantic salmon from Shizuoka.

Cherry tomatoes are from the Netherlands.

 

 

Both were unexpected production areas, but they were very delicious.

Chase the Grape Chill Red 2022 2,800 yen

It is mainly made from Muscat Bailey-A from Katsunuma, Yamanashi Prefecture, and blended with Merlot harvested in a Manriki in Yamanashi City and a small amount of Zala Gyöngye from Yamanashi.

For a while after the release, there was a reducing smell derived from sub-additive-free fermentation, but it has disappeared considerably.

It’s not flashy, but it has a moist and calm taste, and it feels like a red wine from Yamanashi.

It feels somewhat nostalgic.

This may get better if it ages a little more.
