Today’s dinner is Temaki-sushi.

 

 

I got a fresh bone-cut Hamo.

I quickly dipped it in hot and cold water.

 

 

Kihada-Maguro, Madai, Hamo, Squid, Salmon, Aji, Shrimp, Tuna-mayo, Cucumber

 

 

This Hamo was delicious.

Also, I often see Kihada-Maguro in the nearby sea at the fish market these days.

A large Kihada-Maguro with good freshness is much tastier than the Hon-Maguro from sea farm.

 

 

Temaki-sushi is the best after all.

 

 

Today’s Wine

 

 

Hamada Vineyard Chardonnay 2020 6,000 yen

This Chardonnay was grown in Hamada Vineyard’s estate vineyard in Mikasa, Hokkaido.

After 5 years of aging, the taste has become more and more polished.

I felt thick and deep fruits flavor, sharp acidity unique to Hokkaido Chardonnay, and outstanding minerality.

This still has the potential to mature, I think.

The combination of Temaki-sushi and fine wine makes me happy.
