“Hokine Beef” from Tochigi

To purchase seasonings, I went to the depot of the Seikatsu Club Co-op in Azamino.

I bought the usual soy sauce, mirin, sesame oil, etc.When I looked at the meat section, I found beef that looked delicious.

It is said to be “Hokine Beef” from Tochigi.

 

 

It is a beef cow born by crossing a female Holstein breed kept by a farmer of the Nasu Broom Root Dairy Cooperative with a Japanese black breed and a male species.

So, I made it steak tonight.

Hokine Beef, I’m right.

The flesh is tender, but chewy.

Every time I bite into it, the flavor of the juicy meat fills my mouth.

It’s very tasty.

It’s similar to the lean pastured cattle I used to eat in Argentina.

Wagyu beef and imported beef sold in supermarkets do not have this style.

I want to eat it again.

Estezargues Cotes du Rhone Blanc 2023  1,850 yen

Today’s main dish was steak, but I wanted to drink a good chilled white wine, so I opened this Rhone white.

It is a natural wine from the well-known Estezargues made with no pesticides, no added sulfurous acid, and wild yeast fermentation.

I felt thick fruitiness, rounded acidity and wrinkled minerality.

A plump mouthfeel that feels thick.

It is a blend of 70% Grenache Blanc, 10% Clarette, 10% Bourboulenc and 10% Viognier.

It was also perfect for today’s lean steak.
