Shallow pickling of Nozawa and Cabbage

Assorted Sashimi

 

 

The sashimi is leftovers from yesterday’s Temaki-sushi.

With this, I made Temaki-sushi by myself today.

I call this the second stage of Temaki-sushi.

 

 

Wine of the Day

 

 

Domaine Pech Pouille Rouge 2023  1,380 yen

It was a dinner of fish and vegetables, but I wanted to drink some red wine, so I opened this sustainable wine from Languedoc Minervois.

It is a red wine with a strong concentration of fruits flavor, but it is smooth to drink.

Combined with its beautiful acidity and pleasant astringency, it goes well with both sashimi and salt-grilled Madai.

It is a blend of 35% Carignan, 30% Grenache, 20% Cinsault and 15% Syrah grown on the Minervois estate vineyards.

It has acquired HVE Level 3, which is said to be the strictest sustainability certification in France.
