I pruned the branches of the Cabernet Sauvignon in my garden.
I left only three branches, and I dropped all the others.
It’s neat.
The buds are also much larger.
It looks like it will bloom soon.

This season, I boiled edamame for the first time.
Mediterranean-style Chirashi-sushi
I bought a lot of sweet basil today.
It is mixed with pine nuts.
I used to use wine vinegar for sushi rice, but now I use apple vinegar.
Apple vinegar seems to make a fruity and gentle vinegared rice.
Bonito, Katsuo, Madai, Scallops, Salmon, Shrimp
Mediterranean-style Chirashi-sushi, after all, is delicious.
Wine of the Day
Domaine Pech Pouille Chardonnay 2023 1,800 yen
It is an advanced version of the winery’s white wine.
It is made from 100% Chardonnay from Languedoc-Minervois, which is close to the Mediterranean.
Minervois doesn’t have a Chardonnay AOC, so the standard is Vin de Pays, but it’s clearly a fine wine.
I felt very rich fruits flavor, well-balanced acidity and minerality.
The clear and pure mouthfeel gives it a fluffy elegance that feels like it is wrapped in cotton.
It is a good wine. It’s a really good wine.
It is a sustainable wine with HEV Level 3 certification.
It went perfectly with today’s sushi.
