I got a fresh flying fish from Sagami Bay.
I made it carpaccio.

I used to be made Acqua Pazza with whole fish such as scorpionfish, but it is easier and easier to eat when made with fillets.
Today I used Hamaguri-clams from Chiba instead of Asari-clams. The soup got be thicker than the Asari-clams.

It is an organic wine from Penedes, Spain.
It is a blend of Xarel-Lo and Muscat grown in the estate vineyard.
I felt a gentle mouthfeel that balances the body and osmotic pressure.
It has a very good balance of fruitiness, acidity, and minerality.
Last night’s great wine evoked my emotion, but this one is normally very tasty.
2nd Oriol Rossell Xino-Xano Merlot Syrah 2022 1,350 yen
The red is a blend of Merlot and Syrah.
Speaking of Penedes, it is the production area of sparkling wine “Cava”, but there are also many good red wines.
I felt ripe black berry fruits taste, pleasant acidity and mellow tannins.
It has a nice body and a gentle feeling that makes you feel relaxed.
It is a good wine.
