Park Hyatt Tokyo’s Japan restaurant “Kozue”

Today, at Park Hyatt Tokyo’s Japan restaurant “Kozue”, I will be facilitating the winemaker’s dinner of Villa d’Eest Garden Farm and Winery in Nagano.

 

 

In addition to the fact that I had previously delivered Villa d’Esto wine to Park Hyatt Tokyo for a long time.

 

 

I and winemaker Konishi have a brother-disciple relationship with the late Mr. Usuke Asai, who is said to be the founder of Japan Wine, as his teacher, and today’s event was realized.

 

 

We had a meeting with the manager of the Kozue, Mr. Isowaki.

 

 

Speaking of which, Mr. Isowaki and I also visited Villa d’Est Winery.

When I looked it up, it was October 2016.

 

 

Mr. Yoshida, the head chef, will explain the dishes.

 

 

In fact, Mr. Yoshida was worried about deciding on the menu, and after tasting each wine twice, the menu was finally decided last night.

 

 

Wine is served in a pairing method that combines a bottle of wine with one dish.

 

 

The food is so wonderful that you can feel the awesomeness of every plate.

The best Japan cuisine is served.

 

 

In particular, Mr. Yoshida was most worried about the plate to go with the pinot gris, and in the end it was decided that the duck would be grilled over charcoal.

 

This is exquisite.

I’ve never had such a wonderful duck before.

I’m sure there will never be.

 

 

The flavor of the flesh of Pinot Gris, the umami of the duck, and the aroma of the charcoal grill are mixed together, and you will writhe in its deliciousness.

I have a long relationship with Mr. Maeda.

 

In fact, Mr. Maeda is a big fan of Villa d’Esto’s wines and has visited the winery five times so far.

One of those times I was with him.

Mr. Maeda, this is a service that manages the temperature of all the wines provided in units of 1 degree.

It’s a terrific setting.

In other words, I’m quite a “wine nerd.”

 

 

Park Hyatt Tokyo will soon undergo a complete renovation.

The wine party at the Japan restaurant Kozue was also the last event before the renovation.

 

 

It was a very popular dinner party that was booked up on the same day and there was a waiting list.

 

 

We are very happy to have been able to help with this event on such a memorable occasion.

 

Anyway, the wines at Villa d’Est are delicious.

 

 

After the event, a commemorative photo was taken with all the staff at Kozue.
