Temaki-Sushi

Today’s dinner was Temaki-Sushi.

 

Hon-Maguro, Wild Yellowtail, Mejina, Suzuki, Squid, Scallops, Ma-Aji, Hotaru-Ika, Tuna mayo, Cucumber

 

It’s been a long time since I’ve had Temaki-Sushi.

It’s very delicious.

 

 

1st Chase the Grape Field Blend 2021 2,800 yen

It is made from Koshu and Muscat Bailey-A, which were cultivated in mixed planting in Kofu, Yamanashi with a small amount of Chardonnay from Katsunuma.

Compared to immediately after release, the body and acid have become firmer.

Apparently, the grapes had power.

 

 

2nd Chase the Grape Chill Red 2022 2,800 yen

It is a red wine made from mainly Muscat Bailey-A from Katsunuma, Merlot from Manriki, and a small amount of some white grapes.

They were fermented with wild yeast and aged is casks.

Then they were bottled with non-clarification and un-filtering.

At first, I felt a slight reduction odor.

When the reducing odor disappeared, the gentle fruit flavor spread throughout my mouth.

The style is like a “Bio” Japan Wine, I think.

I think it’s delicious.
