I received some guest, who is a wine professional, and had a Temaki-Sushi party.
I got very fresh Houbou that went up to Enoshima.
I cut them down into three pieces, and the skin is boiled in hot water and vinegared.
The middle bone and alla were grilled with salt.
Houbou is delicious.
Hon－Maguro, Kuro-Dai, Houbou, Salmon, Scallops, Squid, Aji and tuna-mayo.
Temaki-Sushi is delicious.
1st Domaine Hase Fukuihara Blanc 2021 2,640 yen
It is a white wine from Takayama Village, Nagano Prefecture.
The owner, Mr. Hase, used to be a producer of a major record company.
He is a graduate of the first batch of ARC-EN-VIGNE, a wine school that trains winemakers, and produces excellent wines from the vineyards of Takayama villages.
Because of the very small product, the wine is difficult to buy.
I felt fresh fruits flavors, pure acidity and elegant mouthfeel.
Mr. Hase’s wine is really delicious.
It is difficult to buy.
2nd Misono Vineyard Chardonnay 2021 5,000 yen
It is a Petillant made from 100% Chardonnay harvested in Yoichi, Hokkaido.
The owner, Mr. Matsumura, has a background of working in the IT-related department of a major general trading company.
Mr. Matsumura is also an alumnus of ARC-EN-VIGNE.
The base wine is 100% Chardonnay grown by Mr. Soma, who runs the restaurant Yoitteni in Yoichi, and is fermented with natural yeast, no supplementary acid, and no sugar.
I felt very gentle foam, soft fruit flavor and cool acidity, plus a deep minerality.
After all, Misono Vineyard is also delicious.
3rd Kizan Wine Red 2004
In response to today’s guest’s request to drink Kizan’s old vintage, I pulled out the treasured old vintage from my cellar.
This is astonishing, astonishing!
The fresh red fruit that doesn’t seem to have aged for 19 years explodes.
In addition, it has a complex and smooth taste unique to long-aged old wine.
The long-term aging potential of Black Queen of Kizan wine has been talked about for a long time, but not so much!
It’s amazing, it’s amazing, it’s incredibly delicious.
Of course, this is already the last one.
Will I ever be able to drink it again?
