Today’s dinner was Temaki-Sushi.
Hon-Maguro, Meji-Maguro, Suzuki, Scallops, Bonito, Aburi-Sawara, squid, Ikura
Ikura is homemade by loosening raw muscle and marinating it in soy sauce.
Differs in good taste.
1st Diamond Shuzo Chanter Shimoiwasaki Koshu 2021 2,200 yen
This white wine is made from 100% Koshu grown in Shimoiwasaki, Katsunuma.
I felt big volume and elegant fruits.
It is probably Koshu that bears the most style resemblance to Burgundy white wine.
The grapes are fermented at low temperature and then matured by Sur Lie.
When Mr. Yoshio produced Koshu, the style is different from others.
It is very delicious.
2nd Obuse Wine Chabudai wine red 2022
The other day, I drank Chabudai wine made from Muscat Bailey A by Diamond Shuzo.
Obuse Chabudai is made from Bailey Alicante-A which is a hybrid Japanese grape.
Both chabudai are the winery’s lowest-priced products, but they’re great.
Even though basic wine, there is no cutting corners or compromises.
I felt rich fruits taste, beautiful acid and pure mouthfeel.
It was perfect for Temaki-Sushi.
I feel that Diamond Shuzo and Obuse Wine have a common style.
Both are great!
