Chirashi-Sushi a la Mediterranean

Today, it is a summer staple, Chirashi-Sushi a la Mediterranean.

 

 

Vinegared rice with apple cider vinegar, wine vinegar, sugar, pine nuts and basil, topped with sashimi marinated in olive oil and balsamic, petite tomatoes and cress.

 

 

 

 

It’s so delicious!

 

 

 

 

1st Belles de Sud Chardonnay 2021 1078 yen

There are several bottles in my cellar which I got off due to a bad label, so I chose it again.

I felt pure and plump fruits, nice acidity and good minerals.

This is a really good Chardonnay.

It went well with today’s Chirashi-Sushi.

 

 

2nd Estezargues Organic Côte du Rhône Blanc 2021 1350 yen

This white Rhône wine is made from organically grown grapes fermented by wild yeast without sulfur.

It is bottled without transparency and unfiltering.

I felt thick and rich fruit taste, rich acid and outstanding minerality.

It is a full-bodied white wine, but it has a very soft and gentle mouthfeel.

I drank it chilled well, but it was delicious even if I added ice later.

Very chilled white wine is the real thrill of summer.
