It was a very warm day even though it was in middle November.
I cooked Kikuchi Nabe.
Very good!
1st Andre Rohrer Bulles de Vie 2021
It is made from 30% Auxerrois, 30% Muscat, 30% Silvaner and 10% Gewurztraminer grown in Alsace by biodynamic method.
The grapes are fermented by wild yeast without sulfur and bottled by non-filtered.
It was the second time I had tasted this PetNut.
It is difficult to choose a wine for Kimuchinabe because the soup is hot.
I chose this one because it has a big capacity for foods coupling I think.
Even though the cloudy color, I felt very pure and natural fruits, very fine acidity and so comfortable minerals.
It was very delicious and good for Kimuchinabe.
2nd Obuse Winery Sogga pere et fils Clos de Kakuto Chardonnay
I chose this Chardonnay because it has a big capacity for foods pairing,too.
It is made from 100% Chardonnay grown in Domaine Kakuto in Takayama Nagano.
All grapes were fermented in the new oak casks.
What a elegant wine is this!!
I felt very elegant-comfortable fruits, beautiful acidity and super fine minerals.
I think it is a great wine.
I should taste this one with some excellent dishes.
However, it was very good for Kimuchinabe, as well.
