Sensory Evaluation

I wake up at 5:00 am and went to Kobe.

I was happy to take the new train of Shinkansen, N700S.

 

 

I arrived at Kobe Wine afternoon.

 

 

 

I had a sensory evaluation for the wine making project of Hakutsuru Sake Brewery.

 

 

I have been joining in the project as a wine consultant.

 

 

The evaluation member were winemakers in Kobe Wine, project stuff of Hakutsuru and Ms. Katsuko Sasaki, who is a former winemaker of Kobe Wine.

 

 

She is the owner & winemaker of Norakura Wine in Hokkaido, which is avery popular cult wine.

 

 

We tasted a sample bottle of Chardonnay and Cabernet Sauvignon Clairet.

Unfortunately, we had a record-breaking long rainfall in August.

The condition of the grape was the worst ever.

However, as we did triage devotedly, both of the wine has very pure and fruity character.

 

 

We gave very high scores for both of the wine.

 

 

They will be released in May.

Please expect it!

 

Also, we exchanged each other’s thoughts about the wine making in this year actively.  

Fortunately, all of us shared the basic concept for the new wine.

 

I think we did a very good job!!

 

After the meeting, I moved to Oska and had some private dinner at Cantina Albalonga in Umeda.

 

 

We enjoyed very nice dishes and very fine wines.

 

 

 

 

It was very, very nice dinner.
