Wagyu Beef Steak with Pomme Friet, Yuzu-Wine Sauce

 

 

 

 

I cooked a wine sauce with a whole Yuzu, skin and juice.

 

Very good!

 

 

 

 

Hamada Vineyard Sauvignon Blanc 2019  4000 yen

I visited to Hamada Vineyard in Hokkaido last week.

It is the second released vintage of the winey.

It is made from 100% Sauvignon Blanc in the estate vineyard.

It is fermented by wild yeasts and matured in the oak cask.

 

I am sure that it is a very special wine.

It is an outstanding Sauvignon Blanc!

 

The color was gold.

I felt very rich-deep fruits, long-elegant acidity and super-fine minerals.

The mouthfeel was very dense and concentrated but also very elegant.  

The wine showed an ambivalence expression, masculine and feminine faces.

 

 

What a great Sauvignon Blanc is this!

The winery produced only one cask, 282 bottles.

It’s already out of stock.

I want to buy more but I can’t.

 

 

It was very good for Wagyu steak today, too.
