I changed the recipe.
It was better than before, I think.
1st Domaine D’O Chardonnay 2017 Sample Tasting
Domaine D’O is a new winery built in Limoux Languedoc.
The winery is owned by Chateau Canet in Minervois.
Floris, who is the owner & winemaker of the both wineries, was born in Burgundy and worked at a fine winery in Burgundy.
Limoux is located in high altitude in Languedoc and has a cool climate.
Thanks of the cool climate, this Chardonnay shows very elegant taste.
I felt very clean fruits, nice acidity and fine minerals.
I was sure it is a very good Chardonnay.
It may be a top class Chardonnay in Languedoc.

Oh! What a tremendous Pinot Noir is this!
It is an outstanding Pinot Noir in Languedoc.
Very, very nice!
When Floris came to my shop last April, he talked about this wine to me.
I felt he had a big confidence for this Pinot Noir.
Finally, I understand him.
It is a really outstanding Pinot Noir.
I felt very complex-concentrated-delicious fruits, marvelously silky tannin and very long-comfortable after taste.
So delicious!
I will buy this one.
