In the afternoon, after some business meeting in Shibaura, I stopped by The Cellar main store in Toranomon for the first time in a long time.

 

Then, Mr. Kanayama, a former staff member, was working.

When I asked, I heard that he works as a sake brewer at Hanagaki, a sake brewery in Fukui Prefecture from autumn to spring, and works part-time at Toranomon until the next brewing.

 

Then, suddenly, we decided to have a glass of wine together.

 

 

We went to Sushiya-no-Goto in Roppongi.

We had a delicious sushi, it’s been a long time.

 

 

 

I met Mr. Kanayama again for the first time in five years, and we had a good conversation.

 

 

I brought my own wine.

Sauvignon Blanc 2023 from Shinshu-Takayama-Winery and Merlot Ordinare 2023 from Obuse Wine.

Both of them are outstanding Nagano wines.

They were perfect for Mr. Goto’s sushi.

 

 

Then, by chance, the person sitting next to us asked for Japan sake, and the sake that came out was Fukui Hanagaki!

 

 

It is a sake made by Mr. Kanayama.

It is said that Mr. Goto liked this sake.

What a connection!

 

 

Mr. Kanayama also said that it was the first time he had seen Hanagaki in a restaurant in Tokyo.

 

Naturally, we also tasted a glass of Hanagaki.

 

It was a pure, sharp and beautiful sake.

Sushi goes well not only with wine, but also with Japan sake.

 

 

It was a day of many coincidences, or rather, connections.
