Mediterranean-style Chirashi-Sushi

Just when I saw the Cabernet in my garden had sprouted, the leaves are already taking shape.

This year, I will try to grow these leaves in long shoots.

 

 

Today’s dish was Mediterranean-style Chirashi-Sushi.

 

 

I cooked with a lot of ingredients such as Bachi-Maguro, Madai, Salmon, Hotaru-ika, Mackerel, Shrimp and Avocado.

 

 

It’s delicious.

 

 

1st Marquis de Beau Rond Rose 2022 1,050 yen

Mediterranean-style Sushi goes well with Languedoc rose wine.

The acidity and minerality of the red fruits go really well together.

Anyway, the new rose of the Marquis de Beau Rond is really delicious, if I say so myself.

I want you to compare it to the rose that costs about 3,000 yen, which you often see these days, if I say so myself.

 

 

2nd Estezargues Organic Cotes du Rhone Red 1,580 yen

The red is a “bio” wine from the South-Rhone.

It is a blend of Grenache, Syrah and Cinsault.

While having a firm body, it has a gentle mouthfeel unique to wine fermented with wild yeast without sulfite additives.

The winery is located on the southern outskirts of the Rhone region, close to the Mediterranean.

It was also perfect for Mediterranean-style Sushi with plenty of olive oil.
